10-Minute Chia Seed Jam

Makes ~ 1 cup

Salad Ingredients:

  • 2 cups fresh or frozen fruit (see options below)
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice
  • 1–2 tablespoons honey or maple syrup - optional

Directions:

  1. Heat fruit in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. Using a spoon or potato masher, mash the fruit to desired consistency.

  2. Stir in the chia seeds and lemon juice until combined. Taste to gauge if sweetness is needed. If so, stir in 1 or 2 tablespoons.

  3. Remove from heat and let cool for 5 minutes to thicken.

  4. Stir before serving. Transfer to a sealed container and refrigerate for up to 1 week, or freeze for up to 3 months.
