Avocado Black Bean Brownies
Avocado Black Bean Brownies
Makes 12 brownies
Prep time 10-15 minutes Cook time 20-25 minutes
Ingredients:
- 1 (15 oz) can black beans, drained and rinsed
- 2 eggs or Flax seed egg substitute (2 heaping Tbl ground flax mixed with 6 Tbl water)
- ½ of a large ripe avocado
- 1 Tbl melted coconut oil or oil or choice
- cup unsweetened cocoa powder plus 1 Tbl
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp pure vanilla extract
- ½ cup organic brown sugar
- 1/3 cup chocolate chips plus 2 Tbl for topping (you can use vegan chocolate chips)
Directions
- Preheat oven 350 degrees; grease an 8x8 inch baking pan
- Place the black beans and avocado in a food processor and puree until smooth; add eggs, oil, cocoa, baking powder, baking soda, salt, vanilla and sugar and puree until mixed. Batter should be very thick.
- Fold in 1/3 cup chocolate chips.
- Pour batter into pan and sprinkle with remaining chocolate chips.
- Bake ~25 minutes or until knife inserted in the center comes out mostly clean and the top of the brownies begin to crack.
- Cool completely and cut into 12 servings.
