Avocado Black Bean Brownies

Avocado Black Bean Brownies

Makes 12 brownies

Prep time 10-15 minutes        Cook time 20-25 minutes

Ingredients:

  • 1 (15 oz) can black beans, drained and rinsed
  • 2 eggs or Flax seed egg substitute (2 heaping Tbl ground flax mixed with 6 Tbl water)
  • ½ of a large ripe avocado
  • 1 Tbl melted coconut oil or oil or choice
  • cup unsweetened cocoa powder plus 1 Tbl
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tsp pure vanilla extract
  • ½ cup organic brown sugar
  • 1/3 cup chocolate chips plus 2 Tbl for topping (you can use vegan chocolate chips)

Directions

  1. Preheat oven 350 degrees; grease an 8x8 inch baking pan
  2. Place the black beans and avocado in a food processor and puree until smooth; add eggs, oil, cocoa, baking powder, baking soda, salt, vanilla and sugar and puree until mixed. Batter should be very thick.
  3. Fold in 1/3 cup chocolate chips.
  4. Pour batter into pan and sprinkle with remaining chocolate chips.
  5. Bake ~25 minutes or until knife inserted in the center comes out mostly clean and the top of the brownies begin to crack.
  6. Cool completely and cut into 12 servings.

141 calories, 6.5g fat (3.9g saturated), 23.6g carbohydrate (13g sugar), 4.4g fiber, 2.9g protein
