Beet and Apple Salad

Beet and Apple Salad

Total time: approx. 15 minutes


Ingredients

  • 2 medium size beets, peeled and grated
  • 2 medium size granny smith apples, peeled and grated

Dressing

  • 2 tablespoons of lemon juice
  • 2 tablespoons of olive oil
  • 4 tablespoons of apple cider vinegar
  • 2 teaspoons of sugar

Instructions

  1. Place grated beets and apples in a large mixing bowl
  2. Whisk all of the dressing ingredients in a bowl
  3. Add dressing to the beets mixture
  4. Mix well and serve cold
