Chicken Brats

Chicken Brats

Total time: approx. 1 hour 30 minutes

Serves 6

Ingredients

  • 1 cup minced yellow onion (1md onion)
  • 4 cloves garlic, minced
  • 1 Tbs canola oil
  • 1 cup cooked brown rice
  • 1 lb. ground chicken breast
  • 2 tsp fennel seed
  • 1 tsp paprika
  • 1 tsp black pepper
  • Dash of ground cloves
  • ½ tsp cayenne pepper
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • 1 tsp ground mustard seed
  • 1 tsp thyme
  • 1 tsp poultry seasoning
  • 1Tbs ground sage

Instructions

  1. Saute onion and garlic in canola oil until browned.
  2. Mix browned onion and garlic, and cooked rice, ground chicken breast, and all herbs and spices together.
  3. Let rest in refrigerator for 1+ hour.
  4. Roll mixture into sausage shapes, or into 1 ½” meatball size. Bake at 400 F for 15 to 20 minutes, until the internal temperature is 165 F.
