Chocolate Chia Pudding

Makes ~ 4 servings

Ingredients:

  • 1 C chia seeds
  • 3 C almond milk (or dairy, soy, other non dairy milks)
  • 2 tsp vanilla extract 
  • ½ tsp cinnamon
  • ¼ tsp espresso powder (optional)
  • 2 Tbl cocoa powder
  • ¼ C maple syrup (or honey or agave)

Directions:

  1. Blend all ingredients in a blender or in a bowl with an immersion blender until the chia seeds are broken down. It should become thick and creamy.
  2. Portion into 4 jars or containers. Add toppings of your choice! Nuts, berries, shredded coconut

Can be stored in airtight container in the fridge for up to 4 days
