Easy Baked Oatmeal Muffins

Makes ~ 8 muffins

Ingredients:

  • 1 ½ C old fashioned oats (NOT quick or steel cut)
  • 2 Tbl ground flax seed
  • ½ tsp cinnamon
  • 1 tsp baking powder
  • 1 large egg
  • ¼ C maple syrup or honey or agave
  • 1 C milk (dairy or non dairy)

Directions:

  1. Heat oven to 350 degrees and line muffin tin with muffin papers or spray with pan spray

  2. In a large bowl, mix together all ingredients. Spoon or pour into muffin tin. Be sure to evenly divide liquid between them.

  3. Bake 20-25 minutes until lightly golden and just set- no longer jiggling.

  4. Cool completely before storing. Will last 4 days in the fridge or 1 month in the freezer.
