Green Lentil Stew

Green Lentil Stew

Total time: approx. 50 minutes


Ingredients

  • 2 tablespoons of olive oil

  • 1 medium onion, diced

  • 2 cloves of garlic, crushed

  • ½ cup diced celery

  • ½ cup diced red pepper

  • 1 cup green lentils, washed

  • 1 cup of crushed tomatoes

  • 4 cups of water

  • 2 teaspoon sof salt

  • 1 teaspoon of black pepper

  • 1 teaspoon of oregano (optional)

     

Instructions

  1. In a large saucepan, sauté onions and garlic in olive oil. 

  2. Add celery and red pepper. 

  3. Continue to saute over medium heat 7-10 minutes. 

  4. Add lentils, crushed tomatoes, water, salt and pepper.

  5. Cover and bring to a boil. Lower the heat and let it simmer for 25-30 min.

  6. Serve hot with a dash of oregano. Yield: 4-6 servings
