Ingredients
- Eggs, 6 whole and 4 egg whites
- Oil, 1 teaspoon
- Onion, ¼ cup cooked
- Mushrooms, ¼ cup cooked, sliced or chopped
- Kale, 1 cup cooked or 1.5 cup chopped fresh spinach
- Low sodium turkey sausage, 2oz chopped
- Cheese, 2oz
Directions
- Scramble eggs in bowl. Mix in cooked vegetables, sausage and cheese.
- In large fry pan, heat oil on medium heat. Add egg/vegetable mixture. Cook for 4-5 minutes. Avoid stirring.
- Preheat oven to 425◦.
- Once the eggs start to set, turn heat off. Eggs will continue to cook with range off. Let sit for about 3 minutes.
- Place eggs in preheated oven. Bake for about 4 minutes and then switch to broil. Broil for about 1 minute or until top is browned.
Note: This dish makes good use of leftover vegetables. Use spinach for a quick green alternative.
