Ingredients

  • Eggs, 6 whole and 4 egg whites
  • Oil, 1 teaspoon
  • Onion, ¼ cup cooked
  • Mushrooms, ¼ cup cooked, sliced or chopped
  • Kale, 1 cup cooked or 1.5 cup chopped fresh spinach
  • Low sodium turkey sausage, 2oz chopped
  • Cheese, 2oz

Directions

  1. Scramble eggs in bowl. Mix in cooked vegetables, sausage and cheese.
  2. In large fry pan, heat oil on medium heat. Add egg/vegetable mixture. Cook for 4-5 minutes. Avoid stirring.
  3. Preheat oven to 425.
  4. Once the eggs start to set, turn heat off. Eggs will continue to cook with range off. Let sit for about 3 minutes.
  5. Place eggs in preheated oven. Bake for about 4 minutes and then switch to broil. Broil for about 1 minute or until top is browned.

Note: This dish makes good use of leftover vegetables. Use spinach for a quick green alternative.
