Grilled Salmon with Citrus & Herbs

Ingredients:

  • 1 ¼ pound skinless salmon fillets or steaks
  • 2 teaspoons freshly grated lemon zest
  • 2 teaspoons freshly grated lime zest
  • 1 tablespoon minced fresh garlic
  • ¾ teaspoon coarse salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh flat leaf parsley
  • 1 tablespoon chopped fresh thyme

Directions:

  1. Preheat broiler, grill pan, or grill. 
  2. Combine all ingredients, except salmon, in a small bowl.  Mix well.
  3. Rub mixture on salmon. 
  4. Place salmon under broiler, on a pre-heated & oiled grill pan, or on grill. 
  5. Turn once after 3 – 5 min. 
  6. Grill other side for additional 3 – 5 min. for medium rare.  Makes 4 servings
