Grilled Salmon with Citrus & Herbs
Ingredients:
- 1 ¼ pound skinless salmon fillets or steaks
- 2 teaspoons freshly grated lemon zest
- 2 teaspoons freshly grated lime zest
- 1 tablespoon minced fresh garlic
- ¾ teaspoon coarse salt
- ½ teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh flat leaf parsley
- 1 tablespoon chopped fresh thyme
Directions:
- Preheat broiler, grill pan, or grill.
- Combine all ingredients, except salmon, in a small bowl. Mix well.
- Rub mixture on salmon.
- Place salmon under broiler, on a pre-heated & oiled grill pan, or on grill.
- Turn once after 3 – 5 min.
- Grill other side for additional 3 – 5 min. for medium rare. Makes 4 servings
