Marinated Pork Skewers with Peach Salsa
Serves 6
Ingredients:
Pork Skewers:
- Pork Loin, Boneless (trimmed of excess fat) - 1 ½ Pounds
- Cumin - 2 Tablespoons
- Chili Powder - 2 tablespoons
- Salt Black pepper - pinch
Peach Salsa:
- Fresh or Frozen Peach Slices - 1 ½ cups
- Fresh Tomatoes (diced) - ½ cup
- Cilantro (chopped) - ¼ cup
- Onions (diced) - ½ cup
- Lime Juice - 2 Tablespoons
- Crushed Red Pepper Flakes - 1 teaspoon
- Extra Virgin Olive oil - 2 teaspoon
Directions:
- For the salsa, combine all the ingredients in a small bowl. Toss well, and let the salsa marinate for at least one hour, set aside.
- Trim pork into 1 ½ inch cubes. Season and toss with cumin, chili powder, and salt & pepper. Place port on skewers, (four each) .
- Grill or roast skewers at medium heat until fully cooked.
- Top pork skewers with peach salsa.
