Mediterranean Style Orzo Salad

Ingredients:

1 ½ cup of Orzo pasta

6 cups of water

1 cup of diced tomatoes

½ cup of diced red pepper

¾ cup of finely chopped red onion

½ cup chopped parsley

 

Salad dressing:

4 tablespoons of olive oil

5 tablespoons of apple vinegar

5 tablespoons of freshly squeezed lemon juice

2 teaspoons of salt

½ teaspoon of black pepper

Directions:

Pour water into a large saucepan and bring to a boil over high heat.  Stir in the orzo.

Cover and cook until the orzo is tender but still firm.  Drain the orzo through a strainer and transfer to a large bowl. 

In a small bowl, mix vinegar, lemon juice, olive oil, salt and pepper.

Add tomatoes, red pepper, onion, parsley, and the dressing to orzo.  Season the salad to taste with salt and pepper, and serve at room temperature. 

Yield: 8-10 servings
