Protein Egg Biscuits

Makes 15 servings 

Ingredients:

  • 2 C all-purpose flour
  • 1 Tbl baking powder
  • ¼ tsp baking soda
  • 1 C 2% or full fat cottage cheese (don’t use fat free)
  • 3 large eggs
  • 2-4 Tbl milk if needed
  • ½ C shredded cheddar cheese
  • 2 scallions, white part, chopped

Directions:

  1. Preheat oven to 425 degrees. Line baking pans with parchment paper.
  2. In a large bowl, whisk the flour, baking powder, baking soda.
  3. In a separate bowl whisk the cottage cheese and eggs.
  4. Mix the wet ingredients and the cheese and scallions into the dry and stir with a fork or spatula until the flour is absorbed and you have a stiff dough. This may take a couple of minutes. If the flour mixture won’t fully incorporate, add 1-2 Tbl milk at a time until it just comes together.
  5. Scoop using ¼ C measuring cup or larger cookie scoop and drop onto the baking sheet. Leave 2-inches between each biscuit.
  6. Bake until golden and set, about 10-12 minutes.

Add-ins: You can use the cheese and scallions or substitute for other flavors. Try ¼ C feta cheese with 3 Tbl finely chopped fresh basil and 1/3 C chopped sundried tomatoes

To reduce sodium, reduce the amount of cheese used or substitute a no salt baking soda
