Red Lentil Soup
Red Lentil Soup
Total time: approx. 30 minutes
Ingredients
- 1 cup of red lentils
- 5 cups of water
- 1 medium onion, peeled and roughly chopped
- 1 medium potato, peeled and roughly chopped
- 2 tablespoons of olive oil
- 1 teaspoon of salt
Instructions
- In a large saucepan, combine all ingredients
- Cover and bring to a boil
- lower the heat and let soup simmer for 20- 25 minutes
- Puree the soup with an electric hand mixer
- Add salt and pepper to taste
- Serve hot with a dash of lemon juice if you'd like
