Red Lentil Soup

Red Lentil Soup

Total time: approx. 30 minutes


Ingredients

  • 1 cup of red lentils
  • 5 cups of water
  • 1 medium onion, peeled and roughly chopped
  • 1 medium potato, peeled and roughly chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt

Instructions

  1. In a large saucepan, combine all ingredients
  2. Cover and bring to a boil
  3. lower the heat and let soup simmer for 20- 25 minutes
  4. Puree the soup with an electric hand mixer
  5. Add salt and pepper to taste
  6. Serve hot with a dash of lemon juice if you'd like
