Sesame Ginger Edamame Noodles

Sesame Ginger Edamame Noodles

Adapted from Sweet Peas And Saffron (accessed, 6/7/2025)

Makes ~ 12 servings

Salad Ingredients:

  • 4 oz whole wheat spaghetti or soba, cooked
  • 10 oz bagged slaw
  • 1 ½ cups cooked edamame
  • 1 teaspoon sesame seeds
  • Green onions to garnishren
  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons sesame oil
  • 1 teaspoon low sodium soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced

Directions:

  1. Make dressing while pasta is cooking or cooling.

  2. In a ½ pint jar combine the rice vinegar, honey, sesame oil, soy sauce, garlic, and ginger. Whisk olive oil and set aside.

  3. In a large platter, combine the pasta and bagged slaw. Shake up dressing and pour over everything. Top with edamame. Use tongs to toss up the salad.
