Shepherd Salad with Feta Cheese

Total time: approx. 20 minutes


Ingredients

  • 3 medium tomatoes

  • 1 medium cucumber

  • 2-3 sweet banana peppers

  • 1 medium onion

  • 2 tablespoon of olive oil

  • 3 tablespoon of lemon juice

  • 1 tablespoon + 1 teaspoon of salt

  • 4 tablespoons of crumbled feta cheese (optional)

Instructions

  1. Finely slice the onion and put the slices into a shallow container.

  2. Sprinkle the slices with 1 tablespoon of salt and mix well by squeezing the juice out of onions.

  3. Rinse salted slices and drain the water.

  4. Cut tomatoes, cucumbers and green pepper in small cubes. Transfer salad into a mixing bowl and add onions. 

  5. Dressing: Mix olive oil, lemon juice and salt well and add to salad.

  6. Garnish with feta cheese.

  7. Serve cold. Yield: 4-6 servings
