Split Pea Soup

Yields 8 servings 

Ingredients

  • 1 cup green split peas (dried, sorted & rinsed)
  • 5 cups water
  • 1 medium onion, peeled & roughly chopped
  • 1 medium potato, peeled & roughly chopped
  • 2 Tbl olive oil

Instructions

  1. Combine all ingredients in a large sauce pan.
  2. Cover and bring to a boil.
  3. Reduce heat and simmer 30-35 minutes until peas are tender.
  4. Puree the soup with an electric hand mixer or in a food processor or blender.
  5. Add salt and pepper to taste.
  6. Serve hot with a dash of lemon juice.
