Sweet Potato Hash with Tofu Chorizo Crumbles

Makes 3 servings

Ingredients:

  • ½ cup tofu chorizo crumbles (see recipe)
  • 1 large sweet potato, diced
  • 1 small onion, finely diced
  • 1 medium red bell pepper, diced
  • 2 Tbl oil

Directions:

  1. Heat oil in a skillet over medium- medium high heat

  2. Add onion and cook 2-3 minutes, add pepper and potatoes and continue to cook until potatoes are tender and crispy.

  3. Add tofu chorizo and heat through. Serve!

Season with additional spices to your preference- smoked paprika, salt free spice blends; hot sauce.You can add other vegetables as well- diced mushrooms, spinach.

To lower potassium, you can double boil the potato then add at the end with the chorizo. Double boiling may reduce potassium by half.
