Tofu Chorizo Crumbles

Tofu Chorizo Crumbles 

Modified from a recipe by Sam Turnbull of It Doesn’t Taste Like Chicken and one from Okonomi Kitchen

Makes 10 (roughly ¼ cup) servings

Ingredients

  • 2 Tbl canola oil
  • 2 Tbl homemade reduced sodium soy sauce ½ tsp ground black pepper
  • 1 Tbl cider vinegar
  • 1 Tbl chili powder
  • 1 Tbl smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme and/or oregano
  • ½ tsp ground black pepper
  • 1 tsp ground cumin
  • 1/8 tsp ground cloves
  • 1 tsp liquid smoke
  • 1 block extra firm, no drain tofu

    Directions

    1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
    2. Mix all of the ingredients EXCEPT the tofu together in a medium bowl.
    3. Crumble tofu into the mixture and mix gently.
    4. Spread it onto the baking sheet and bake 25-30 minutes, gently stirring every 10-15 minutes.
    5. It should be browned, some pieces will be darker than others.
    6. You can eat this as a substitute for sausage, add it to a hash or tacos.
