Zucchini Patties

Zucchini Patties

Total time: approx. 30 minutes


  • 2 medium size zucchinis, peeled and grated
  • 4 tablespoons of flour
  • 1 teaspoon of baking powder
  • 2 eggs
  • 1 cup of green onions, chopped thinly
  • 2 teaspoons of dried dill or dried parsley
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper


  1. In a medium mixing bowl, add all of the ingredients and mix with a spoon
  2. Place a nonstick pan over medium heat
  3. When the pan is heated, add one tablespoon of zucchini dough to the pan
  4. Shape lightly so the patty is round
  5. Add 3-4 patties to the pan and cook 2- 2.5 minutes until the bottoms are light brown
  6. Turn the patties and cook the other side until light brown
  7. Transfer the cooked patties to a serving platter
  8. Repeat with rest of the dough
  9. serve warm or room temperature with tomato sauce or tzatziki sauce

Yields: 6-8 servings
